Tween 60

Tween 60, also known as polysorbate 60, polyoxyethylene sorbitan monostearate. Molecular formula: c64h126o26, lemon to orange oily liquid or semi gel, slight special odor, slightly bitter taste. Soluble in water, aniline, ethyl acetate and toluene, insoluble in mineral oil and vegetable oil.

Application:

 

Emulsifiers, stabilizers (especially for frozen desserts to avoid separation of oil and water), dispersants (such as dispersion of non dairy coffee partners), foaming agents to keep bread and donald nuts hydrated, and alcohol free beverages added to alcoholic beverages.
